Deep in the forests of the Transylvanian Carpathian Mountains, bees create something quite different. Forest honey is gathered from the rich natural environment of the trees and woodland, producing a honey that is darker, deeper and less traditionally sweet than typical blossom varieties.
Its intense amber colour hides a complex, slightly malty and woody flavour — a taste that feels unmistakably connected to the forest it comes from.
Naturally abundant in polyphenols and antioxidant compounds, forest honey is also valued for its mineral content, including potassium, calcium and magnesium, alongside naturally occurring enzymes, amino acids and organic acids.
